Tonnato Tonight!

It has been the most amazing weekend here in Chester County, PA - absolutely lovely weather - crisp and clear - pure autumn! It's been a busy weekend too - lots of clean up from the storms of last week, but also lots of time for fun. Friday we ventured out to Lancaster with my brother and his family for First Friday Art Stroll, saw some amazing work, including a solo show by quilter Sue Reno. Saturday evening was a reunion with college friends - we're not getting older, we're getting better!!! It's so true!!!

Sunday dinner had to be easy and relaxing - Tonnato Sauce with Pasta and Arugula. What is tonnato sauce - it's basically a tuna sauce - made with canned tuna. Tonnato sauce is really Italy's answer to tuna noodle casserole - just so much better!!! And simple - you can whirl this dinner up in a snap and impress the pants off of everyone. Keep in mind - not all canned tuna is equal - buy the best canned (jarred) tuna packed in olive oil that you can find. I picked up this beautiful baby arugula at the growers' market - so delicate but with so much flavor!
My refrigerator is packed with a bounty of veggies - I had to create a great salad to accompany dinner. Here is my composed salad, layered with radicchio, roasted red beets, diced cucumber, sheeps' milk feta and chopped pistachios, dressed with a light shallot vinaigrette and served with warm slices of roasted delicata squash.
